【瓠瓜酸辣湯】,物美價廉又清爽的酸辣湯

酸辣湯食譜: 以當季食材,瓠瓜替代筍絲的作法!

酸辣湯食譜! 夏天到了,喝點酸辣湯實在過癮又開胃! 這次我們用夏季盛產又便宜的瓠瓜取代筍絲,口感入口即化外,風味上也更加清爽,也能在炎熱的夏天補充更多來自瓜類的水份。

【食材】

瓠瓜100克、紅蘿蔔50克、黑木耳2朵、豆腐半盒、柴魚10克、水1000克、油1大匙、醬油2大匙、鹽1小匙、地瓜粉2大匙、白胡椒/白醋/香油/蔥花適量

 

【作法】3~4人

1.將1000克水煮開,放入柴魚片後,關火,泡3~5分鐘,濾出柴魚高湯,待用。

2.取一鍋開中火,倒入1大匙油,炒香紅蘿蔔絲與黑木耳絲。

3.淋入醬油炒香,再倒入柴魚高湯煮滾。

4.滾後放入切成細條的瓠瓜,煮到半透明後,再放入豆腐。

5.以鹽調味後,淋上地瓜粉水勾芡(地瓜粉2大匙+5小匙水混合均勻),請分次淋上邊攪拌,到喜愛的濃稠度時即可停止添加。

6.轉小火,淋上蛋液,蛋花熟後即可關火。

7.食用前淋上一點白醋、白胡椒、香油、蔥花更加美味。
